Sunshine cupcakes ( 14 pieces)
A:
125g butter
10g icing sugar
2 eggs grade B (beaten)
B:
100g self- raising flour
1 tea spoon baking powder
50g almond powder
C:
100g pumpkin (pared off skin,sliced, steamed, mashed whilst hot )
50g pumpkin seeds
50g sunflower seeds
30g dried yellow sultanas
Material: 14 pieces paper cup (2.2”x1.3”)
Method:
1. Beat butter & sugar of ingredient A. add eggs in a slow stream. Fold in ingredient B , mix well.
2. Add in ingredient C, mix & spoon into paper cup 3-quarter of the way up. Arrange in a baking tray.
3. Bake no 2 in oven 150®C for 20-25 minutes.
