Banana Walnut cupcakes




Banana walnut cupcake (10 pieces)

A: 
135g bananas (fully ripen)
80g brown sugar
2 eggs grade B (beaten)
60g butter
30g fresh milk

B
130g self-raising flour
¼ tea spoon bicarbonate of soda

C
60g walnuts (toasted,diced)
1 banana (ripen, sliced)

Material:  10 pieces paper cup (3”x ½”)

Method:



  1. Mash bananas of ingredient A. set aside to allow colour to darken.
  2. Combine remaining ingredient A and no 1 together , beat well. Fold in ingredient B.  Next, add in walnuts of ingredient C , mix.
  3. Spoon  no 2 into paper cup 3-quarter of the way up. Leave a slice of banana on top, then fit into tart moulds. Arrange on a baking tray. Bake in a oven 150oC for 20-25 minutes.
